Ukrainian Style Pickles offers a range of popular Ukrainian recipes for pickling vegetables and fruit. Recipes in the book utilize both the fermenting method as well as marinating in vinegar combined with other ingredients. A separate chapter is dedicated to dishes that have pickled products as the main ingredient.
In times past, when villagers believed the refrigerator to be a creation of evil forces, pickling of vegetables and fruit was a life-saving necessity. Without it, peoples’ diet suffered greatly from lack of vitamins during the long cold European winters. Nowadays, when fresh produce is available in supermarkets almost all year round, cooks choose to use pickling to achieve specific taste as well as for the health benefits (especially, when it concerns fermented products).
Pickled dishes, based on vinegar marinades, are faster to prepare, and some find their aroma and taste more to their liking than fermented pickles. The book contains both modern and old recipes, adjusted to contemporary culinary methods and ingredients.
